- Bersihkan ayam, potong sesuai selera. Lalu grilled kering ayam (kecuali jeroan dan ceker) di teflon sampai setengah matang. Resep asli, ayam utuh dipanggang di api langsung sampai setengah matang sebelum dipotong2 agar ayam tidak amis dan ketika di masak minyak kaldu ayam cepat keluar. Cuma saya ribet motong2 sendiri, jadi diakali dgn di grill di teflon. Sisihkan.
- Tumis bumbu halus dan bumbu cemplung (kecuali kecombrang) sampai harum.
- Masukkan ceker ayam dan jeroan, tumis sekitar 3 menit, masukkan ayam grilled. Tumis, tambahi kira2 1500mL air, masukkan garam. Tunggu sampai mendidih, sampai sesekali diaduk.
- Masukkan kecombrang, sambil sesekali diaduk, sampai air menyusut sepertiganya.
- Masukkan kentang. Boleh tambahi air sekitar 1000-2000ml. Didihkan, masukkan setengah santan. Tunggu kentang matang.
- Tuang santan terakhir, didihkan di api kecil sambil tetap diaduk agar santan tidak pecah, tes rasa, hidangkan.
